Wedding Cakes 101

A wedding cake doesn't have to be labored over for hours and hours to be beautiful.  A simply iced three tier cake decorated with silk or fresh flowers might be just what you were thinking of. 

Here are two wedding cakes done without the use of decorating bags or tips.

This cake can be done without the worry of being crooked or falling over.  The stand is disposable, although  I know of several professionals who have used it over and over and over.  It is made of styrofoam and cardboard tubing. This cake stand is very sturdy and inexpensive. $19.95

For this example I have iced a 6" layer, a 10" layer and a 14" layer.  This cake would feed 100 guests, not using the top layer. (This one is saved for the bride and groom to have on their first anniversary.)

Each layer is iced on cardboard circles (3 together for sturdiness) and covered with white foil.  The cardboard circles should be 2" larger than the cakes.  i.e. the 6" cake on an 8" cardboard etc.

     
       

 

Notice that this cake is iced with a knife as you would do for a cake at home.  Glue a piece of ribbon around the cardboard plates for a nice finished look.  The flowers can be silk as I've used here or your florist can do arrangements for you to match the other flowers in your wedding.

This stand is usually placed with the support arm behind the cake - but I wanted you to see what was holding the layers up.

simple tiered cake

This cake is also done without the use of bags and tips--it is a 10" layer and a 6" layer.  The separator set is 7".  This cake would serve 30 people, saving the top layer for the bride and groom.

To make this cake the bottom layer (two 2" layers) is iced on three 12 inch cardboards taped together and covered with white foil.  The bottom separator plate is lightly  placed on top of this layer to make impressions of the dowel holes which are on the under side of it.  Insert a sharpened dowel down thru the cake in each impression to receive the dowels.  Insert one dowel, make a mark at the top of the icing with a pencil--cut 4 dowels exactly the same length.   Place the dowels into the bottom of the separator plate, making sure they are straight up and down and lower the plate down onto the cake.  The four pillars will attach to the top of this plate.    The top cake is iced on the top 7" separator plate and placed on the pillars.

This cake was finished off with silk flowers but would be more beautiful with fresh.

Here is another cake that is done without the use of any bags or tips.  This cake does need special inner construction to keep it level and straight.

 

First, level the bottom layers - here I've used two layers each 14" round 2" thick.  Remember the bottom of the layer is the top of the cake -- in other words each cake layer is placed upside down on the plate.  The easiest way to level is using the top of the cake pan -- cut the cake straight across the top of the 2" pan. Turn the cake out onto the cardboard "Dish".  This cake is on an 18" board.    Ice the top of the cake and turn the second leveled layer on top of the first.  Ice the complete layer.

Place a plastic separator plate 10" (the same size as the cake above it) lightly on the iced layer--press down gently to leave impressions from the underside of the plate to indicate where the dowels will be placed.  Remove plate.  Insert pointed dowel into marked spots to cut a path for the dowel to slide down straight.   Place one dowel rod down into one of your paths-mark it at the top of the icing with a pencil - remove -  cut 4 dowels to this length.  Insert the dowels into the bottom of the 10" plate and lower the plate down onto the iced cake--

After leveling the 10" layer, place it on the plate - yes, the plate has 4 protrusions that will go into the cake - "all the better to hold the cake my dear".  Ice the top, add 2nd 10" layer and repeat as you did on the bottom layer.

Add fresh flowers and whalla--gorgeous wedding or anniversary cake.

I SOMETIMES ADD 4 EXTRA DOWELS IN THE BOTTOM LAYER - CUT THE SAME LENGTH AS THE ORIGINAL 4 AND PLACED EVENLY BETWEEN THE 4 WHICH FIT INTO THE PLATE -- I DON'T KNOW IF THIS IS SUPPORT FOR THE CAKE OR MY MIND.
