MARSHMALLOWS by YOU

Making homemade marshmallows is a wonderous accomplishment. It is amazing to do.
You'll need:

1/2 C. cold water
4 Tbsp. unflavored gelatin
1/2 C. warm water
2 1/2 C. sugar
1 1/2 C. LIQUID INVERT SUGAR
3/4 C. light corn syrup
1 tsp. vanilla

Instructions:
Soak gelatin in cold water and set aside. In a saucepan, combine warm water, sugar, and LIQUID INVERT SUGAR. Heat, but do not boil. (What you are really doing here is dissolving the sugar crystals.) Pour into a mixing bowl and add gelatin (this will be a solid lump-scared me!), corn syrup, and vanilla. (It looks pretty awful at this stage-but it's right) Whip until white and doubled in bulk. Pour into a buttered 12 x 18 inch pan and let set 24 hours before cutting. Squares may be rolled in toasted coconut, dipped in chocolate, made into Rocky Road Candy or rolled in confectioners' sugar. Makes about 100 pieces.

At this point it has to set overnight - uncovered --not in the refrigerator - just set. (Hide it in the cupboard or someplace safe from anybody or thing you're worried about.)
The next day --- the fun begins:

- some with toasted coconut and some with white sugar. (It
would have been easier if I'd have poured it in two different pans-as
it is VERY sticky to cut apart.) So you turn the marshmallow out
onto the product you are going to coat it with. |

After coating both sides with the toasted coconut,
I've used scissors to cut a hollow in the center to hold my jelly bean
eggs. (nice and sticky-so they stay put too!) |
Here I've cut out bunny rabbits with a cookie cutter from the portion that I turned out onto regular granulated sugar. I've touched a toothpick to pink coloring and added a nose - I've cleared the sugar to get the "sticky" exposed and added a sugar eye. (I'll do just a dot of color next time!-that was tedious!) |

Now for the remainder of the pieces-----toss them in a different color sugar --- I did this with snowflakes at Christmas time ---the remainder I cut up "any old way" and tossed them in red sugar - this stuck only to the sides which created a red and white item - I bagged them up in cello bags and put a tag on them --saying: 911 - we've had a snowman accident.
Be creative - it's fun --- and they are DELICIOUS!
